Lactose free scones


Here's my recipe to make scones. I was intending to post pictures but I only remembered halfway through scoffing them...

You will need:
8oz plain flour                                                4 or 5 dessert spoons sugar
Half teaspoon bicarbonate of soda                1 and a half oz soya margarine
1 teaspoon cream of tartar                            1 beaten egg
Pinch of salt                                                  soya or lactofree milk to mix
Lactofree cream

What to do:

1.      Weigh out and mix all the dry ingredients together.
2.      Rub in margarine
3.      Add the egg and a splash of soya milk and mix together to get a soft dough, adding more soya milk as required. You want to be able to knead it into a ball with your hands, so if you add too much soya milk just mix in a little more flour.
4.      Shake out some flour onto the worktop and place your ball of dough onto it. Then roll it out with a rolling pin, not too thin as you want the mixture to make nice thick rounds.
5.      Next you want to divide it into six little balls, roll them around in your hands and then place on the tray. (tip: grease the tray by wiping a little soya spread/margarine over it) Once on the tray squish them ever so slightly so they look relatively scone shaped. They will rise whilst in the oven. A cookie cutter also works.
6.      Place in the oven, which should be set around 200 degrees or gas mark 6. Bake for 7-10 minutes.
7.      Make a cup of tea, cut a scone in half and spread lactofree butter and jam on each half. Whip the lactofree cream until stiff to use as a replacement for clotted cream. 

Tip: To make them gluten and wheat free, use rice flour or another suitable alternative to the plain flour. If you want to make more than 6 just double up the ingredients.
